Good day, eh!  If you don’t speak Canadian, that’s a traditional greeting from up North.  And guess what?  I’m actually half Canadian!  My dad is from Alberta Canada, and most of his siblings and his mother still live there.  I also had the opportunity to live in Canada in 2007-2009 while serving an LDS Mission in Manitoba, Saskatchewan, and Western Ontario.  

I love Canada.  It’s such a special place.  Granted, it’s winters are WAY too long and WAY too harsh, but the kind people make up for that.  

Canada is not really known for their cuisine.  Like the United States, Canada is a melting pot of many different cultures and peoples who came to a new land.  Most of the food I think of as Canadian is really Ukrainian or Irish or English, or whatnot.  




This Canadian Cheddar Cheese Soup feels so Canadian to me, because it is the perfect warm-up on a cold night.  It’s pretty quick to throw together and tastes amazing!  Keep scrolling for the Video and Recipe!

This soup is served in Epcot in the Canadian Pavilion at their restaurant called “Le Cellier” and is one of the signature dining experiences at The Walt Disney World Resort.  They also serve amazing Poutine and Creme Brulee!

Canadian White Cheddar Cheese Soup
Warm up on a cold Canadian night with this deliciously creamy soup

Instructions
  1. Start by cooking the cut-up bacon in a heavy pan. Once the bacon is cooked through, add the carrots, red onion, and butter until softened.
  2. Add the flour and cook for 7 minutes. Stir frequently to prevent burn.
  3. Add the chicken stock and bring to a boil. Once it has boiled, lower the temperature to low and add the milk. Stir frequently and let simmer for 15 minutes.
  4. Now turn off the heat and add in all the shredded white cheddar, salt, pepper, Worcestershire sauce, and ginger beer. Stir well and serve immediately! You can also top with crumbled bacon or sliced green onion if you'd like!
